In the fall of 2003, Hearth Restaurant opened to the public. Located in the East Village of New York City, the restaurant marked the initial collaboration of Chef Marco Canora and his partner Paul Grieco, who set out to combine their fine dining sensibilities with the spirit of the neighborhood. Urbane yet casual, the East Village proved a perfect backdrop for Marco's soulful twist on techniques he had honed in some of NYC's top kitchens. At Hearth, the focus is on superior ingredients prepared with subtle complexity, but the pretense typically associated with such a culinary experience is gone.
Just a short walk from Union Square Greenmarket, Hearth is the true embodiment of the farm-to-table movement. The seasonal menu at the restaurant is the product of relationships that Marco has cultivated with local farmers over the past fifteen years. It has long been Marco's belief that the perfect and singular complement to purity of a product is purity of practice; it is this ideal that Hearth has always strived to achieve.
